Freshly baked bread

 – LCHF style

For autumn I also like to bake some hearty breads, full of nuts and seeds. And this is my favorite recipe.  I usually bake 2 of ’em, and cut into slices. I freeze 4-6 slices in a bag, and then it’s very easy to take up the needed amount for the week, and you’ll always have freshly baked bread in the house!

Pennies Nutty Bread

: Mix and pour

Sturdy, tasty LCHF bread with a tough crumb. Wonderful with meats!

Ingredients
  • 100 g Linseeds
  • 150 g Pumpkin seeds
  • 100 g sesame seeds
  • 100 g sunflower seeds
  • 100 g roughly chopped almonds
  • 100 g chopped hazelnuts (or which ever is your favorite)
  • 0,5 dl. oil
  • 2 tsp. salt
  • 5 eggs
  • 150 g shredded cheese ( I use cheddar, but you can just use your favorite)
Directions
  • Step 1 Heat your oven to 160 degrees (celcius)
  • Step 2 Mix seeds and nuts in a bowl with oil and salt.
  • Step 3 Whip the eggs together in a seperate bowl and add to the seed & nuts mixture along with the shredded cheese.
  • Step 4 Pour the dough into the bread-pan covered in baking paper and bake the bread in the oven for 60-70 min.
  • Step 5 Take the bread out and let it cool.
  • Step 6 Slice and serve!
  • Step 7 (Freeze into smaller portions)

The smaller heart-shaped ones are for Diannas lunchbox. I try to keep it creative, but I am no Bento-box-mama!
(It’s insane some of the things they make for the lunch box?!)

Hot September!

That’s not all that happened in September tho…
My dear hubby, munchin and I also took a small trip to Alicante Spain!!
My parents co-own a summerhome in Ciudad Quesada – a wonderful town with a gorgeous view
(as you can see up above!!!)
It was a great vacation – and as the photo states, a whopping 33 degrees!
As you can imagine alot of the time was spent by the pool. 🙂
