Recently we started getting food from Aarstiderne, which is a meal-sending service. They package all the produce and include mouth-watering recipes – all organic! I really love it because it inspires me to try new things in my kitchen. I’ve always been experimental in the kitchen, but cooking soon becomes a chore and I’m back to the same 10 favorite meals. So this is a great way to get variation into your cooking! Tabbouleh has never been one of my go-to-recipes, that is until we tried Aarstiderne!

A gentle reminder

What I love most about receiving these meal-boxes from Aarstiderne is how it challenges me in the kitchen. For instance, I always thought I was good at cooking and I usually season all our meals. Mostly with salt and pepper, but Aarstiderne challenges me to season with lemon/lime and oils as well. Many of these little extra things are what sets an ok meal apart from a delicious one! And a meal-box from Aarstiderne is a loving reminder to fill the everyday meals with love and care as well.

Who would have thought that a meal-box could carry such meaning?! Oh and I love not having to go grocery shopping as well!

The only bad thing I can think off, is that the spices are quite mild and we prefer a little bit more of a kick! But that’s not anything we can’t fix with a little ekstra spice from the spice-rack. 🙂

This recipe is inspired from our mealbox last week and I’ve turned up the fire on the spices a bit (to our preference). Tabbouleh is a definite favorite in our house now, maybe it will be in yours as well? Give it a try!

 

Tabbouleh with lemon-cabbage, fried chicken, tomatoes and mint

Approx. 40 min.

Serves 4

Ingredients:

1 summer cabbage

1 bag of whole-meal couscous

400 g chicken

1 lemon

4-6 tomatoes

1 handful og mint

Spices: Paprika, cumin, all spice, cinnamon, coriander, clove spice, pepper, chili, cardamomme

(create a powder mixture or crush in your mortar).

A fresh and fulfilling dish for those hot summer nights.

Ingredients
  • 1 summer cabbage
  • 1 bag of whole-meal couscous
  • 400 g chicken
  • 1 lemon
  • 4-6 tomatoes
  • 1 handful og mint
  • Spices: Paprika, cumin, all spice, cinnamon, coriander, clove spice, pepper, chili, cardamomme (create a powder mixture or crush in your mortar).
Directions
  • Step 1 Boil some water for the couscous.
  • Step 2 Rinse and prep alle the veggies: Chop the cabbage finely, grate the lemon to get the lemon zest and cut in slices afterwards, Chop and dice the tomates and the mint.
  • Step 3 Add the couscous to a bowl (that can stand boiling point), add 8 dl of boiling water, some salt and 2-3 tbl.sp. of oil. Cover the bowl and let it sit for 5-10 min.
  • Step 4 Cut the chicken out in strips.
  • Step 5 Heat your pan, add oil and let the spices roast on your pan before adding the chicken. This will bring out more of the flavor in the spices.
  • Step 6 Fry the chicken for 6-8 min, until cooked all the way through. Season with salt and pepper.
  • Step 7 Coat the cabbage with 3 tbl.sp. of olive oil, the grated lemon zest and lemon juice. Season with salt and pepper.
  • Step 8 Plate the cabbage on a large serving dish.
  • Step 9 Stir the couscous with a fork to loosen it in the bowl. Add in the diced tomatoes to the bowl of couscous (you could also add in some diced cucumber) and also the mint. Add the mixture on top of the cabbage.
  • Step 10 Top with the fried chicken and garnish with extra mint.
  • Step 11 Serve with plain yoghurt and pita bread.
  • Step 12 Let’s eat!

A little tip; a regular yoghurt dressing is AMA-UH-zing with this!

(yoghurt naturel 3,5%, salt, pepper og a dash of dried crushed chili flakes!) 🙂
