What to do with all that leftover banana…

Dianna LOVES bananas – but most of all she really loves HALF a banana…

Now I really hate waste! And also I love easy solutions… so what does a smart mama do?

Well I created…. *drumroll*

TADA….

Leftover Banana Pancakes!

Wonderful waste-not banana pancakes! Healthy, delicious and even good for your conscience!

By:

Ingredients
  • Leftover banana
  • 1 egg
  • 2 teaspoons of oats (or leftover oatmeal!)
  • Half a teaspoon of sweetner (agave or honey)
Directions
  • Step 1 Mash the banana with a fork.
  • Step 2 Add the egg and oats and mix well.
  • Step 3 Lastly add the sweetner if you like.
  • Step 4 Fry it up on a pan with butter and serve with berries, syrup or even whipped cream!
  • Step 5 ENJOY!

And guess what?!

She absolutely loves it! And I’m happy, because I’ve got an easy afternoon treat and at the same time, I am not wasting any food!

Two for the price of one!

Don’t worry – You can easily add a little greek yoghurt to the mix and as a result make delicious banana/oat muffins instead!

Leftover Banana/Oatmeal muffins

Wonderful, easy, healthy muffins made from banana and oatmeal leftovers!

By:

Ingredients
  • Leftover banana
  • Leftover oatmeal (or 2 tablespoons of oats)
  • 1 egg
  • 2 tablespoons of greek yoghurt
  • Maybe add some berrie, fruit or raisins to the mix.
Directions
  • Step 1 Mash the bananas and add the rest.
  • Step 2 Mix well and pour into muffin cups.
  • Step 3 Bake at 200 degrees for 10 min.
  • Step 4 Serve and ENJOY!
